Birch opened in 2019 as [Dubai](https://9715.ae/dubai/)'s first all-sourdough bakery. It's Emirati-owned, and its loaves are hand-shaped and fermented for over 20 hours from stone-milled Wildfarmed flour grown without chemicals.

You'd never guess it from the street. It works out of the bakery's own production unit at 28, 16B Street in [Al Quoz](https://9715.ae/dubai/area/al-quoz/) Industrial 3, round the corner from the Galadari Motor Driving Centre, behind a big iron gate with a croissant on it. You order and pay at the counter and take it from there.

Croissants are what regulars talk about most, with the morning bun a close second; the morning bun and kouign amann are the bakery's own best sellers, and the honey croissant and breakfast focaccia are the other regular orders. The cinnamon roll is the one to save room for: not too sweet, not too dry and not too buttery. Focaccia comes topped with feta, sesame and honey, or green olives, leeks and sumac. The pastries rotate, so there's always something good on the counter. If coffee isn't your thing, go for the Mirzam Hot Chocolate.

The counter sells out every day, so go early in the morning if you want the full range. There's no indoor dining room: seating is outdoors, on the bench beneath the tree, which is peaceful in winter but a hard sell in the summer heat. Expect AED 50–100 a head.

Worth the detour for anyone who takes their bread seriously, and for a quiet weekday breakfast in the cooler months.
